Morcilla de Burgos, or Black Rice Pudding, is a type of blood sausage originating from Burgos, in Castilla y León, southwest of Bilbao.

Often served as part of a traditional tapas spread, it has a rich, savory flavor with a slightly sweet and smoky undertone. The blood gives the sausage a metallic taste, while the rice and spices add complexity and depth of flavor.
