These clams are collected at their peak, mainly between October and January, directly from the famous Ribeira seafood market in northwestern Spain. Before processing, they are carefully purified for 8 to 12 hours to ensure a clean, sand-free product.
Once selected, they are packed in a traditional escabeche-style brine made from water, onion, bay leaf, lemon and salt. The result is a light, aromatic liquid that preserves the clams’ natural juiciness and ocean-fresh flavour.
